Here’s a great summer time recipe that’s easy to prepare! Ingredients: 1 part 18-year Balsamic vinegar 4 parts Tuscan Herb Extra Virgin Olive Oil Sea salt, to taste Black Pepper, to taste Parmigiano-Reggiano cheese (shaved) French or Artisan bread/baguette Directions: Mix 18-year Balsamic and Tuscan Herb Olive Oil Season to taste with sea salt and black pepper Cut bread on a bias. Green Chili Chicken Casserole by Charity

Ingredients: 2 cans whole green chilis1/2 onionwhite corn tortillasshredded cooked chicken1 can green enchilada sauce1 can cream of chicken soup1 cup shredded colby/jack cheese Topping: Colby/jack cheeseBaklouti green chili olive oilSour cream Directions: Preheat oven to 350 degrees.  Dice green chilies and onions, then brown them in Green Chili Olive Oil.  Rip tortillas into bite size pieces.In large mixing bowl, add the rest of the ingredients and stir.  Pour into casserole dish.  Top with drizzle of Green Chili Olive Oil and cheese.  Bake at 350 for 30 minutes, top with sour cream.  YUM!

Homemade Mac-and-Cheese with White Truffle

Ingredients: 1 8oz. package elbow macaroni2 T. butter, 2 T. Flour, 2 C. milk2 C. shredded cheddar cheeseWhite truffle oilsalt & pepper Directions: Preheat oven to 400 degrees.  Prepare pasta to package directions.  Melt butter in large saucepan.  Whisk in flour until smooth.   Gradually whisk in milk.  Cook, whisking constantly, 5 minutes, or until thickened.  Remove from heat.  Stir in spices, cheese and pasta.  Pour into greased casserole dish.  Bake for 15 minutes until bubbly.  Let stand 10 minutes before serving.  Finish with drizzle of white truffle and salt & pepper to taste.  YUM!

Mixed Green Salad with Whole Citrus Vinaigrette

Ingredients: 2 juicy lemons 1 juicy orange 1 shallot 1 1/2 C pure olive oil 1 tsp sea salt 1/2 tsp freshly ground pepper 1/2 C Sicilian Lemon Balsamic Vinegar 8 C mixed young green lettuces/arugula Directions: Juice lemons, orange, and shallot in a juice extractor.  Put the juices in bowl and whisk in the olive oil in a slow stream to form an emulsion. Season with salt and pepper.
