Buzz in food processor until smooth. Refrigerate for about a half hour before serving.
*Author makes this often with Arbequina Olive Oil for a smooth, mild taste, or Castile Olive Oil for a more punctuated taste, and sometimes, but not always, adds a fresh-pressed garlic clove. Any way, this healthy dip always disappears quickly!
