This versatile vinaigrette uses our premium natural olive oil and our 18-year aged balsamic, but can be varied by substituting flavored olive oils and/or balsamic vinegars. Experiment!
1/3 Cup Extra Virgin Olive Oil such as Koroneiki, Leccino or Coratina
1/3 Cup 18-Year Balsamic Vinegar
2 teaspoons fresh Thyme, chopped
1/4 teaspoon Salt
1/8 teaspoon White Pepper
1 Tablespoon fresh Basil, chopped
Combine all ingredients in a screw-top jar. Cover and shake. Makes 2/3 cup.
