What a wonderful way to use that garden zucchini.  Orange Olive Oil adds delicious flavor and goodness. Ingredients: Mix for 2 minutes:3 eggs2 C sugar1 C orange EVOO1 T vanilla Stir in for 1 minute:2-3 small zucchini, approximately 1 lb., finely shredded* Sift together and mix in until thoroughly mixed:3 C flour1 t. salt1 t. baking soda1/4 t. baking powder1 T cinnamon Scrape bowl and mix until well blended:1 C nuts1 C dried cranberries, raisins or golden raisins Pour into 2 well greased 3 1/2 x 4 1/2 x  1/2-inch loaf pans.  Bake at 350° for  1 hour. Balsamic Reduction

Balsamic reductions are wonderful syrups for drizzling under or over desserts such as brownies, cheesecake, custards, and especially ice cream.  Also nice over pancakes and waffles!  Experiment with flavors from blueberry and strawberry to chocolate and espresso. Method 1: Using a stainless steel sauce pan, bring desired amount to gentle simmer for 3-5 minutes.  Syrup will thicken as it cools so watch carefully so as not to over simmer. Method 2: Pour shallow amount in large glass or ceramic dish and leave at room temperature until desired viscosity.  Natural evaporation makes a natural reduction.

Oh my goodness!  This fudge is THE BEST you’ve ever tasted! Ingredients 10 oz. heavy cream 4 oz. Aged Espresso Balsamic 1 pound (about 2 cups) semi-sweet chocolate chips 3 Tbs. unsalted butter cut into small pieces 1/4 tsp. sea salt 1/2 tsp. vanilla extract Directions Butter a 9×13″ baking pan and line with parchment that overhangs the sides.  In a metal bowl or double boiler, add all of the ingredients except the salt.  Set over a pot of gently simmering water, stirring constantly until the chocolate has completely melted.  The mixture will be very thick.  Spread into the prepared...
