Herbs de Provence Sweet Potato Fries with Lavender Balsamic Honey Mustard Dip

Who doesn't love fries with a meal? But those of us who are, ahem, watching our waistline have to abstain most of the time from these tasty treats due to them being, well, fried.  

Alas! There is an alternative - and it is pretty irresistible! These fries are so tasty, in fact, you might find that your kids prefer them over McDonald's! Quick and easy to prep, low in fat and high in flavor! You can't go wrong!

Ingredients:

Fries

About 1 lb sweet potatoes

Freshly ground pepper

1 tsp Herbes de Provence

2-4 tbsp Herbs de Provence Olive Oil, plus more for pan

1 tsp kosher salt

Dipping Sauce

1/3 cup Dijon mustard

2 tbsp Grainy mustard

2-4 tbsp Lavender Balsamic Vinegar

1-2 tbsp honey

Salt and pepper, to taste

Preparation:

For the fries: Cut potatoes into about 1/2 in. wide and 3-4 in. long "fries". Preheat oven to 450 F, and coat a baking sheet with olive oil or cooking spray. Toss the potatoes in the olive oil, salt, pepper, and herbs, and lay on the baking sheet in a single layer. Bake for 10 minutes, then flip the fries. Bake for about another 10-15 minutes, or until golden and crispy.

 For the dip: Mix all ingredients for the dipping sauce together in a bowl. Set aside until ready to serve.
